Phytic acid (phytate): a naturally occurring antioxidant found in seeds, grains, and legumes. As a food additive it prevents fat oxidation and helps preserve freshness; it is non-toxic and binds (chelates) minerals. Generally recognised as safe (GRAS) in the US.
