Caramel III (ammonia caramel, E150C): EFSA set a stricter daily limit (3× lower than the general caramel group) because the ammonia production process forms THI — a compound that can suppress immune cells. Young children may exceed the safe dose. Also contains 4-MEI, classified by IARC as a possible carcinogen (Group 2B).
